green soup with coconut milk

I prepared this soup last night to use up some ingredients. It’s the best. Don’t worry if the stock doesn’t cover all of the veg. Add the curry paste, and cook for one more minute before adding the chopped spinach, coconut milk, stock and chickpeas. I shall be making this for sure! This vegan soup recipe is quick to make as the veggies are sauteed, then briefly simmered in a coconut milk … Keep simmering and stirring until the greens have wilted and are bright green. Hot fat has an amazing ability to extract and retain the essence, aroma and flavor of spices and herbs and then carry this essence with it when it is added to a dish.
